Savoury Pancake with Cumin Extract

Savoury Pancakes with Avocado, Spinach, Mushrooms, Egg and Cumin Extract

Serves: 2–3

Time: 25–30 minutes

 

🛒 Ingredients

For the pancakes:

  • 150g plain flour

  • 1 tsp baking powder

  • 2 eggs

  • 200ml milk (or dairy-free alternative)

  • 1 tbsp olive oil

  • 1/4 tsp Cumin Extract

  • Pinch of salt & black pepper

For the topping:

  • 1 ripe avocado, sliced

  • 150g mushrooms, sliced

  • 2 handfuls fresh spinach

  • 2–3 eggs

  • Olive oil or butter for cooking

  • Salt & black pepper

  • Fresh herbs (parsley or chives, optional)

👩🍳 Method

1️⃣ Make the batter
In a bowl, whisk flour, baking powder, salt and pepper.
Add eggs, milk and olive oil. Mix until smooth.
Stir in Cumin Extract.

2️⃣ Cook the pancakes
Heat a lightly oiled pan over medium heat.
Pour in batter to form medium-sized pancakes.
Cook 2–3 minutes per side until golden brown. Set aside and keep warm.

3️⃣ Prepare the toppings
In the same pan, sauté mushrooms in olive oil until golden.
Add spinach and cook until just wilted.
Fry eggs to your liking (runny yolk works beautifully!).

4️⃣ Assemble
Stack pancakes, top with sautéed mushrooms & spinach.
Layer avocado slices on top.
Finish with a fried egg, cracked black pepper and fresh herbs.

PS: If you want you can replace Cumin Extract with 4 Spice or 7 Spice Extract as well.
