🥗 Ingredients (Serves 2–3)

1 cup quinoa, rinsed

2 cups water or vegetable broth

1 tablespoon olive oil

½ teaspoon PureXtracts Cumin Extract

1 lemon (zest and juice)

½ red onion, finely diced
-
1 cucumber, diced
-
1 red pepper, chopped
-
A handful of cherry tomatoes, halved

A small bunch of fresh parsley or coriander, chopped

Salt & black pepper, to taste

Cook the quinoa:
Add quinoa and water (or broth) to a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until fluffy. Let it cool slightly. -
Prepare the dressing:
In a small bowl, whisk together olive oil, lemon juice, lemon zest, and Cumin Extract. Season with salt and pepper. -
Combine:
In a large mixing bowl, add the quinoa, onion, cucumber, pepper, tomatoes, and herbs. Pour the cumin-lemon dressing over and toss gently. -
Serve:
Enjoy immediately or chill for 30 minutes to allow the flavours to blend beautifully.
