🥗 Ingredients (Serves 2–3)

  • 1 cup quinoa, rinsed

  • 2 cups water or vegetable broth

  • 1 tablespoon olive oil

  • ½ teaspoon PureXtracts Cumin Extract

  • 1 lemon (zest and juice)

  • ½ red onion, finely diced

  • 1 cucumber, diced

  • 1 red pepper, chopped

  • A handful of cherry tomatoes, halved

  • A small bunch of fresh parsley or coriander, chopped

  • Salt & black pepper, to taste

 

👩🍳 Directions

  1. Cook the quinoa:
    Add quinoa and water (or broth) to a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until fluffy. Let it cool slightly.

  2. Prepare the dressing:
    In a small bowl, whisk together olive oil, lemon juice, lemon zest, and Cumin Extract. Season with salt and pepper.

  3. Combine:
    In a large mixing bowl, add the quinoa, onion, cucumber, pepper, tomatoes, and herbs. Pour the cumin-lemon dressing over and toss gently.

  4. Serve:
    Enjoy immediately or chill for 30 minutes to allow the flavours to blend beautifully.
