Spiced Caramelised Onion & Goat’s Cheese Tart with Cardamom Extract

A golden, flaky tart infused with the warm, aromatic notes of Cardamom Extract. The subtle spice enhances the sweetness of caramelised onions and pairs beautifully with creamy goat’s cheese- creating a sophisticated yet comforting dish perfect for brunch, lunch, or light supper.

✨ Ingredients (Serves 4–6)

For the pastry:

  • 250g plain flour

  • 125g cold butter, cubed

  • 1 egg yolk

  • 2–3 tbsp cold water

  • Pinch of salt

For the filling:

  • 2 large onions, thinly sliced

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 2 tsp brown sugar

  • 2 large eggs

  • 150ml double cream (or coconut cream for dairy-free option)

  • 100g soft goat’s cheese (or feta)

  • 1 tsp Cardamom Extract

  • Fresh thyme leaves

  • Sea salt & black pepper, to taste

🍽 Method

  1. Prepare the pastry:

    • In a bowl, rub butter into flour and salt until crumbly.

    • Add the egg yolk and water, mixing until a dough forms.

    • Wrap and chill for 30 minutes.

  2. Caramelise the onions:

    • Heat olive oil and butter in a pan over medium heat.

    • Add onions, brown sugar, and a pinch of salt. Cook gently for 20–25 minutes until golden and sweet. Set aside to cool.

  3. Preheat the oven:

    • Set to 180°C (160°C fan) or Gas Mark 4.

  4. Roll out & blind bake:

    • Roll the pastry and line a tart tin (about 23cm).

    • Prick the base with a fork, line with parchment, and fill with baking beans.

    • Bake for 15 minutes, remove beans, and bake 5 more minutes until light golden.

  5. Prepare the filling:

    • In a bowl, whisk eggs, cream, Cardamom Extract.

    • Stir in most of the onions and crumble in the goat’s cheese.

    • Season with thyme, salt, and pepper.

  6. Bake the tart:

    • Pour the mixture into the tart case. Top with the remaining onions and thyme.

    • Bake for 25–30 minutes until golden and just set.

  7. Serve:

    • Cool slightly before slicing. Enjoy warm with a green salad or roasted vegetables.
