✨ Ingredients (Serves 4–6)
For the pastry:

250g plain flour

125g cold butter, cubed

1 egg yolk

2–3 tbsp cold water

Pinch of salt
For the filling:

2 large onions, thinly sliced

1 tbsp olive oil
-
1 tbsp butter
-
2 tsp brown sugar

2 large eggs
-
150ml double cream (or coconut cream for dairy-free option)

100g soft goat’s cheese (or feta)

1 tsp Cardamom Extract

Fresh thyme leaves
-
Sea salt & black pepper, to taste
🍽 Method

Prepare the pastry:

In a bowl, rub butter into flour and salt until crumbly.

Add the egg yolk and water, mixing until a dough forms.

Wrap and chill for 30 minutes.

Caramelise the onions:

Heat olive oil and butter in a pan over medium heat.

Add onions, brown sugar, and a pinch of salt. Cook gently for 20–25 minutes until golden and sweet. Set aside to cool.

Preheat the oven:

Set to 180°C (160°C fan) or Gas Mark 4.

Roll out & blind bake:

Roll the pastry and line a tart tin (about 23cm).

Prick the base with a fork, line with parchment, and fill with baking beans.

Bake for 15 minutes, remove beans, and bake 5 more minutes until light golden.

Prepare the filling:

In a bowl, whisk eggs, cream, Cardamom Extract.

Stir in most of the onions and crumble in the goat’s cheese.

Season with thyme, salt, and pepper.

Bake the tart:

Pour the mixture into the tart case. Top with the remaining onions and thyme.

Bake for 25–30 minutes until golden and just set.
