🎄Ginger, Cinnamon & Orange Christmas Shortbread
Delicately spiced, buttery shortbread infused with Ginger and Cinnamon Extract- the perfect festive treat to gift, share, or enjoy with a cosy winter cuppa.
🧈 Ingredients (Makes 20 biscuits)

250 g plain flour

75 g caster sugar (or coconut sugar for a natural option)

175 g unsalted butter (softened)

Zest of 1 orange

½ tsp Ginger Extract (adjust to taste)

½ tsp Cinnamon Extract
- Pinch of sea salt
Optional: 1 tbsp finely chopped crystallised ginger
Optional decoration: melted white chocolate or icing sugar dusting
🍊 Method

Preheat the oven to 170°C (150°C fan) and line a baking tray with parchment paper.

In a large bowl, beat together the butter and sugar until light and creamy.

Add the orange zest, ginger and cinnamon extract, mixing well to infuse the butter.

Sift in the flour and salt, and mix to form a soft dough. If using crystallised ginger, fold it in now.

Bring the dough together gently with your hands- avoid overmixing.

Roll out on a lightly floured surface to about 1 cm thickness.

Cut into festive shapes (stars, trees, snowflakes) using cookie cutters.

Place on the tray and chill for 10 minutes before baking to help them hold shape.

Bake for 12–15 minutes until the edges are just turning golden.

Cool on a wire rack. Once cooled, drizzle with melted white chocolate or dust lightly with icing sugar for a snowy finish.
