A vibrant, plant-based Mediterranean bowl with roasted cabbage, crispy chickpeas, and turmeric dressing. High-protein, gut-friendly, and easy to make!
🧾 Ingredients
For the bowl:
- ½ medium cabbage (cut into wedges)
- 1 tin (400g) chickpeas, drained
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 tsp paprika
- 1/4 tsp Cumin Extract
- Salt & black pepper
For the turmeric dressing:
- 2 tbsp tahini or Greek yogurt
- Juice of 1 lemon
- 1/4 tsp Turmeric Extract
- Water (to loosen consistency)
Optional additions:
- Quinoa or brown rice
- Fresh greens
- Cherry tomatoes, cucumber, olives
- Fresh herbs
🔥Method:
1. Roast the Cabbage
- Preheat oven to 200°C
- Toss cabbage wedges with olive oil, garlic, paprika, salt & pepper
- Roast for 25–30 minutes until golden and slightly crispy
- Add 1/8th tsp Cumin extract
👉 Tip: Slight charring = more flavour
2. Crisp the Chickpeas
- Heat olive oil in a pan
- Add chickpeas, paprika, salt & pepper
- Cook for 8–10 minutes until golden and crunchy
- Add 1/8th tsp Cumin extract
3. Make the Turmeric Dressing
- Whisk tahini (or yogurt), lemon juice, Turmeric Extract, and a pinch of salt
- Add water gradually until smooth and pourable
👉 You’re aiming for a creamy, golden drizzle
4. Build Your Bowl
Layer your ingredients:
- Base: greens or grains
- Add roasted cabbage
- Top with crispy chickpeas
- Finish with turmeric dressing
