Mediterranean Chickpea & Roasted Cabbage Bowl with Turmeric Dressing

A vibrant, plant-based Mediterranean bowl with roasted cabbage, crispy chickpeas, and turmeric dressing. High-protein, gut-friendly, and easy to make!

🧾 Ingredients

For the bowl:

  • ½ medium cabbage (cut into wedges)
  • 1 tin (400g) chickpeas, drained
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp paprika
  • 1/4 tsp Cumin Extract
  • Salt & black pepper

For the turmeric dressing:

  • 2 tbsp tahini or Greek yogurt
  • Juice of 1 lemon
  • 1/4 tsp Turmeric Extract
  • Water (to loosen consistency)

Optional additions:

  • Quinoa or brown rice
  • Fresh greens
  • Cherry tomatoes, cucumber, olives
  • Fresh herbs

🔥Method:

1. Roast the Cabbage

  • Preheat oven to 200°C
  • Toss cabbage wedges with olive oil, garlic, paprika, salt & pepper
  • Roast for 25–30 minutes until golden and slightly crispy
  • Add 1/8th tsp Cumin extract

👉 Tip: Slight charring = more flavour

2. Crisp the Chickpeas

  • Heat olive oil in a pan
  • Add chickpeas, paprika, salt & pepper
  • Cook for 8–10 minutes until golden and crunchy
  • Add 1/8th tsp Cumin extract

3. Make the Turmeric Dressing

  • Whisk tahini (or yogurt), lemon juice, Turmeric Extract, and a pinch of salt
  • Add water gradually until smooth and pourable

👉 You’re aiming for a creamy, golden drizzle

4. Build Your Bowl

Layer your ingredients:

  • Base: greens or grains
  • Add roasted cabbage
  • Top with crispy chickpeas
  • Finish with turmeric dressing
