Fresh Blueberry tarts with nuts, coconut and cardamom extract

A deliciously fragrant blueberry tart recipe infused with Cardamom Extract for a warm, aromatic twist. The natural sweetness of dates and fresh blueberries pairs beautifully with the comforting spice of cardamom, making this a perfect light dessert or wholesome afternoon treat.

🫐 Ingredients

Crust

  • 1/2 cup almonds
  • 1 tbsp coconut oil
  • 1 tbsp maple syrup
  • 1/4 tsp Cardamom Extract

Filling

  • 3/4 cup blueberries
  • 1/4 cup chopped dates
  • 2 tbsp cacao nibs
  • 2 tbsp shredded coconut
  • 1/8 tsp Cardamom Extract
  • Optional: squeeze of fresh orange juice or zest

✨ Directions

1. Make the crust

Blend almonds in a food processor until crumbly. Add coconut oil, maple syrup, and Cardamom Extract. Blend until the mixture starts sticking together.

Press into two small tart tins or ramekins and refrigerate for 30–60 minutes until firm.

2. Prepare the filling

In a bowl, combine blueberries, chopped dates, cacao nibs, shredded coconut, and Cardamom Extract. Add a little orange zest if using.

3. Assemble

Remove tart bases from the fridge and spoon the filling into each tart. Sprinkle with extra coconut and a few blueberries on top.

Serve chilled.
