Spiced Guacamole on Sourdough Toast

Creamy avocado, tangy red onion, juicy tomato and fresh chilli come together with the warm, earthy flavour of Our Award Winning Cumin Extract. Served on buttery sourdough toast, it makes a satisfying breakfast, lunch or nourishing snack.

Ingredients

  • 2 ripe avocados
  • 1/2 red onion, finely diced
  • 2 tablespoons white vinegar, optional
  • 1 small red chilli, finely diced
  • 1 small tomato, finely diced
  • A small handful of fresh coriander, finely chopped
  • Juice of ½ lime
  • 1 teaspoon extra virgin olive oil
  • A small pinch of Cumin Extract, or to taste
  • Salt, to taste
  • 2 large slices of sourdough bread
  • Butter, for spreading

Method

  1. Use the finely diced red onion as it is, or go one delicious step further: soak it in white vinegar for 15 minutes, then drain. This gives your guacamole an extra tangy twist.
  2. Scoop the avocados into a bowl and roughly smash them with a fork, leaving a little texture.
  3. Add the red onion, chilli, tomato, coriander, lime juice, olive oil and Cumin Extract. Season with salt and gently mix until combined.
  4. Toast the sourdough until golden and crisp, then spread it with butter while still warm.
  5. Spoon the spiced guacamole generously over the buttery sourdough toast. Garnish with extra coriander, chilli or a squeeze of lime, if desired, and enjoy immediately.
