A light, icy summer dessert combining crisp apple, fresh lime and a subtle aromatic hint of clove.
Cool, refreshing and incredibly simple to make, this granita is a lovely way to enjoy apple in warmer weather. The Clove Extract adds just enough warmth and spice to contrast with the icy apple without making it feel heavy or autumnal.
Ingredients
Serves 4
- 500ml cloudy apple juice
- 1 crisp green apple
- Juice of 1 lime
- 1–2 tsp honey or maple syrup, depending on the sweetness of the apple juice
- A small pinch of Clove Extract
- A few fresh mint leaves, to serve
- Thin apple slices, to garnish
Method
- Roughly chop half the apple and blend with the apple juice, lime juice and honey until smooth.
- Add a small pinch of Clove Extract and blend briefly. Clove has a naturally powerful flavour, so start with a tiny amount, taste and add a little more if needed.
- Pour the mixture into a shallow freezer-safe dish and freeze for around 1 hour.
- Once ice crystals begin to form around the edges, use a fork to scrape and break them up. Return to the freezer.
- Scrape the mixture every 30–45 minutes for around 3–4 hours, until you have light, fluffy ice crystals.
- Spoon into chilled glasses or small bowls and finish with thin slices of fresh apple and a few mint leaves.

Apple and clove are a classic pairing, but serving them ice-cold with fresh lime gives the combination a completely different summer feel.
The crisp sweetness of apple balances the deep, aromatic character of clove, while lime brings a fresh citrus edge. The result is refreshing, fragrant and just a little unexpected.
Quick tip
For an extra-refreshing version, place your serving glasses in the freezer for 10–15 minutes beforehand and serve the granita immediately after scraping.
