The apple season is in full swing and there are so many varieties to use in your recipes. Apples make a great contrast to the sweetness of the sugar and bitterness of the cocoa powder.
These chocolate apple brownies are soft and moist with a gooey-fudgy centre. Finely grated apple gives a sweet and light flavour that balances the taste of the dark chocolate and warmth of the cinnamon. Makes for a perfect autumn treat!
Prep Time: 20 minutes Total Time: 25-35 minutes Servings: 12
1/2 tsp Cinnamon Dry Extract, for sprinkling at the end
1/4 tbsp icing sugar
Preheat the oven to 180C and line a 9x13 inch baking pan with parchment paper. Set to one side.
Melt the butter and chocolate in a small heat-proof bowl over simmering water. Once melted, remove from heat and let cool to room temperature.
Mix the eggs and sugar together with an electric mixer, until smooth.
Add the finely grated apples to the eggs and sugar mix.
Pour in the melted chocolate and butter and continue mixing.
Add the cocoa powder and mix with a spatula.
Mix the flour and Cinnamon Dry Extract together in a separate bowl. The slowly sift this into the brownie mixture and mix until completely blended together.
Transfer the mixture to the lined pan and spread evenly.
Sprinkle the crumbled walnuts over the top and bake in the oven for 35 minutes.
Whilst the brownie is cooling, mix the icing sugar and remaining Cinnamon Dry Extract together. Once the brownie has cooled completely, sift the icing sugar mix over the top before cutting into pieces.
