A classic mouth-watering recipe for crepe pancakes with sweet or savoury choice of toppings and healthy extracts.

Serves: 4
Ingredients for the crepe pancakes:
100 g plain flour
300 ml whole milk
1 egg
Extra virgin olive oil for frying
Method:
- Mix flour, milk and egg in a blender. Set it aside for 15-20 minutes.
- Heat a 26-28cm frying pan over a medium heat. Once hot, lightly oil the base of the pan. Add a small ladleful of batter, then tilt the pan to swirl the batter evenly over the base.
- Cook for 1-2 minutes until the pancake is set, golden underneath and coming away from the pan at the edges. Loosen the pancake with a spatula, then flip and cook for a further 30-60 seconds until golden on both sides.
- Slide the pancake onto a plate and enjoy it with the toppings and extracts of your choice.
Suggested Sweet topping - Raspberries, Strawberries, Blackberries, mint leaf, walnuts, icing sugar and sprinkle of Cinnamon & Vanilla extract on the top.

Suggested Savoury topping - Ham, grated cheddar cheese and sprinkle of 7-Spice extract on the top.
