We love a bit of Christmas baking, especially if they're a little healthier than normal. 😋🧁

These chocolate chip muffins went down a treat with our family (which is why there are only two left in this picture!) so we thought we'd share the recipe so you can indulge your loved ones too 🤎🤎

Ingredients
- 250g oat flour (if you don’t have oat flour, blend whole dry oats in a blender)
- 1 tsp bicarbonate of soda
- 100-150g dark chocolate chips (if you don’t have chips just cut chunks of any dark chocolate)
- 100g caster sugar
- 2 eggs, lightly beaten
- 150ml natural yogurt

- 100g butter, melted

Method
1. Heat oven to 180C and line a 12 hole muffin tin with paper cases.
2. Put the oat flour and bicarbonate of soda into a large bowl, then stir in the chocolate chips and sugar.
3. Add the beaten eggs, cinnamon extract, yogurt and butter, and stir to combine. It doesn’t matter if the mixture looks a bit lumpy, it’s more important not to overmix or the muffins will turn out tough.
4. Fill the paper cases and bake for 20-25 mins until risen and golden brown.

5. Transfer to a rack to cool – or eat slightly warm. You can sprinkle a little bit of Cinnamon Dry Extract on the top for extra flavour
